Lemon Polenta Cookies


  • 125gms softened butter
  • 1/4 cup caster sugar
  • finely grated rind of 1 lemon
  • 1teas vanilla essence
  • 1/2 cup polenta
  • 1/2cup G.F. all purpose flour, sifted
  • 1/4 teaspn baking powder, sifted
  • 1/2 cup raisins
  • sifted icing sugar for dusting
GF = Gluten Free
Gluten Free Lemon Polenta Cookies


Beat butter and sugar with electric mixer till light and fluffy, add rind and vanilla and beat until well combined.
Add polenta, flour and baking powder and raisins, stir with wooden spoon until well combined.
Place teaspns of mixture 2-3 cms apart on baking trays and bake at 180deg for 20mins or till golden brown.
Cool then dust with icing sugar

Variations-Sultanas or currants can be used in place of raisins

  • Just got back from a trip which was very hard to eat but made it just fine. I will try this recipe and carry along next time, sounds good. All recipes are so much appreciated because I see everyone else eating and I have to just say no and sit and wonder what I can eat that is tasty. Thanks
